If you're like me, you associate summer with a delicious drink on the patio with friends; however, given my current maternity status, my drink needs to be baby-friendly, which obviously means no booze.
Sure, there are a TON of 'virgin' cocktails out there and I could absolutely buy some of the yummy pre-mixed stuff, add ice and be good to go. The challenge I have with those pre-mixed drinks is that they aren't exactly packed with nutrition and I like to save my calories for ice cream at this point (I'll blame the baby for that one).
SOOOOOOO I came up with this yummy, virgin but somewhat healthy pina colada alternative! It's quite delish if I do say so myself.
Here it is:
Yummy tummy-friendly Pina Colada
Coconut greek yogurt
sweetener of your choice (think stevia, agave syrup etc or, if you're not worried about calories you can us regular sugar, maple syrup or ice cream)
the truth is I didn't measure my ingredients exactly (super helpful) but I used about 1/2 cup yogurt, 3/4 cup pineapple, 3/4 cup of ice, 3/4 cup of milk and I sweetened with vanilla and a little stevia.
Add your ingredients to your favorite blender (I use the Ninja) and blend until smooth.
This drink is even toddler approved so that says something!
